The History
From a simple artisanal vinegar maker to an undisputed world leader. From the first label bearing a grape covered by a spider's web, to a modern brand for export.

The story of Monari Federzoni balsamic vinegar began in 1912 in a small barn above a food market belonging to Mrs. Monari Federzoni in the heart of the historic centre of Modena. The tradition continued with her son and grandson, Giovanni, who expanded the grape cultivation and brought the production to an industrial level.

Today, Monari Federzoni remains a family owned company, taking great pride in producing solely authentic Balsamic Vinegar of Modena.

The Product
Balsamic Vinegar of Modena is made from the must of vines typical of the Emilia Romagna region: Lambrusco, Trebbiano, Ancellotta, Albana and Sangiovese. Left to ferment naturally with wine vinegar in hardwood vats and casks, the process that creates balsamic, slowly follows the natural range of temperature of an area with very hot humid summers and long cold winters. Through constant contact with the wood and the natural progress of alcoholic and acetic fermentation, a special alchemy helps intense aromas to develop, creating a characteristically soft and pleasantly full flavor. This is the unique formula behind an exclusive product that is known worldwide today. Monari Federzoni processes and ages this formula in wooden vats with a total capacity of 1,500,000 liters used for the mellowed product, and for the aged product, over 2,000 barriques and small casks with a total capacity of 900,000 liters are used.

The Production
Four modern “high tech” bottling lines, distinguished by speed and automation, meet every customer’s requirement producing a range of up to 175 different products. Some of the most unique among them include Organic and Kosher Balsamic Vinegar. The incredible versatility of the range is bolstered by a daily production capacity of around 80,000 bottles as well as a fully-computerized production cycle for all components. In June 2009, the European Union granted the PGI, Protected Geographical Indication, to the Balsamic Vinegar of Modena. Such recognition ensures that only products genuinely originating in the region of Modena are allowed in commerce as they possess certain qualities due to such geographical origin.
