GR.A.M.M. Srl produces pasta made with high quality semolina under several prestigious brands around the world with European quality certifications (BRC, IFS, ISO 14001 and ISO 9001).

Our “caserecci” product line is obtained by using artisan processing with small machines that make a product identical to handmade. This is obtained by a combined action of a cutter and a dragger roller that gives the same product shape, consistency and general characteristics of handmade products. Our bronze die pasta cuts are the typical rough pasta cuts obtained by a very traditional production process made by pressure against the bronze die and a cutter.

All of our products are dried slowly at low temperatures. This drying process permits us to obtain a product with the same chemical-physical and organoleptic characteristics of the raw material used. We also produce Traditional Bakery Products, made with natural flavors or dehydrated vegetables which are perfect for spreading on cheese and for garnishing with fresh vegetables.

Our Gnocchi is made with 100% Italian flour and European potato flakes. The recipe uses a “heat method” that takes the artisan processing evaluating during the mixing time: all raw materials are added according to the consistency of the dough following the order required by the recipe. The Gnocchi are pasteurized for the first time in the tunnel before packing operations. After this process each bag is checked by a metal detector, weighed and then put through a second cycle of pasteurization. Allowing the product to be shelf stable where it can be kept at room temperature for 12 months.
