The history of our winery begins in the first years of the past century. Grandfather Martino opened the first winery in 1920, and then the second winery was opened by father Leonardo in the 1930s with a production capacity of 40,000 quintals of wine.
Today, the tradition continues with the third Conserva family with the new winery located in the vineyards of the estate “The Francesca”, which is situated in the eastern side of the “Murgia tarantina” in the countryside between Martina Franca and Crispiano, inside the production territory of wines of (Denomination of controlled origin) called “Colline Joniche Tarantine”, (Decree Ministerial of 1 August ’08 in Officia Gazette – General Series n°195 of 21 August ‘08. The methods of organic cultivation in the spacious stretch of approximately 20 hectares of vineyards, carefully selected, guarantee superior levels of genuine wines produced with enological results linked with the perfect harmony between vineyard and environment. The treatment of the vineyards, the hand-picked grapes as per ancient tradition, the wine making process with techniques and equipment of modern conception, the aging treatment of red wines in barrels of French “allier” for a period of 6-12 months, and the refinement in bottles for an additional 6-12 months, satisfy the characteristics of natural and excellent quality of wines produced. A “real” wine which maintains all its original pureness and which does not contain non-nutritional residuals of technological treatments, always respecting the discipline of the guarantee AIAB (Italian Association of Biological Agriculture). As of 2003, our winery achieved the recognition of “Biological Agriculture” which derives from the adherence of production parameters defined by the institute for the certification of ethics and environment, “ICEA” code company "IT ICA PT0802", which begins by inspecting the grapes and finishes by verifying the percentage of sulfites present in the wine.
The activities of the winery also conform to the National Organic Program USDA - code company " ITNP 220" - for the sale of wine by organic agriculture in the United States.
