In 1910 Giovanni Tomasello built a small sail windmill concentrating on the production of pasta made from grain grown locally and dried in the sun.
The average content of a wheat grain remains more or less intact in the semolina and successively in the pasta, as shown in the following table:

The characteristics of a good pasta are:

  • uniformly smooth appearance with no roughness in transparency, without punctures or dark shadows;
  • a clear and unmistakable amber yellow colour;
  • absence of smell;
  • the taste (of uncooked pasta) should have a slight hint of sweetness;
  • when broken the sound should be dry and the break smooth and glassy.

Tomasello pasta is a product of excellent quality achieved through continuing investment in technology and plant.
The high quality of the product is guaranteed by the particular attention of the management to maintaining high standards of hygiene and technology within the plant at all times, while the Company has its own laboratory which constantly monitors the quality both of raw materials and the finished product.
Tomasello has three lines of product, ‘Classiche’. ‘Le Speciali’ and ‘Trafilate al Bronzo’.
The production processes are geared towards turning out high quality pasta.  At the beginning the mill carries out a process of grinding which ensures the production of clear yellow semolina, well cut (with clean edges), and with sufficient granularity to permit the even absorption of water in the mixing phase.  Samples of the semolina are taken before the mixing process for analysis of the necessary relationship to quality standards.  In particular, the level and quality of gluten, the protein value, dry residue, humidity, color, granularity and possible presence of black spots and husks are all assessed.
The Company has prepared a manual of correct hygienic practice according to the norms of HACCP (Hazard Analysis Critical Control Point).
Tomasello has established and maintains an efficient management system of quality control to carry out these policies which has been developed in cooperation with all the Company’s activities and based on the requirements of the law UNI EN ISO 9001/2000.
The Company has defined its environmental policies with the aim of achieving the certificate of environmental management, according to the law UNI EN ISO 14001, by December 2004.

Tomasello is actively in the process of obtaining the ‘Certificazione per la tracciabilità dell’intera filiera’ (Certificate for traceability of the whole enterprise) for its products.
